Grilling Veggies

Do any of you have good success with grilling veggies? Please share! I want to learn. I’ve seen the baskets to put the veggies in, and I assume you spray them with a cooking spray. I found this site that has some good info about grilling veggies, but not the seasoning.

I’m looking for good seasoning recipes/combinations.  Perhaps sauces/glazes.

And here’s Food Network’s Paula Deen’s recipe, which just uses a bottled vinaigrette dressing (not very original).

  1. Here’s what I do, set the oven to 350 (I think), cut up veggies.
    Line cookie sheet with foil.
    Put veggies on sheet.
    Pour over some olive oil, just enough to lightly coat everything
    Add seasonings; garlic and rosemary are great. Maybe some basil/parsley/Italian seasoning, whatever you like.
    I think it takes about 30-45 minutes. I’ll have to make some and let you know.
    Good veggies to use: peppers, tomatoes, potatoes, sweet potatoes, etc.

  2. Oh. You asked for grilled veggies. Oops. I thought it said roasted.
    Umm in that case I have no advice, I just throw mine on skewers and serve with butter.
