Endurance Balls

Who couldn’t use more endurance in their huevos for all their great runs, rides, and physical feats? Ha. Enjoy these Endurance Balls, a recipe shared with me by Prana Fitness’ friend Greg.  I made a batch up last night and they’re scrumptious- good mix of slow burning energy with natural sugars- a nice homemade alternative to store-bought bars.  Look good? 

Endurance Balls:

  • 1 cup oatmeal
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1 cup coconut flakes
  • 1/2 cup ground flaxseed
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla

 Mix all ingredients together until thoroughly incorporated. Chill in refrigerator for at least 30 minutes. Once chilled, roll into balls and enjoy. Store in an airtight container and keep refrigerated for up to a week.

Probably a new staple to my on-the-go life of my Timbuk loaded at any given moment with several changes of clothes, toiletries, and a day’s worth of meals and water.
