Plan Ahead

Today as I was making myself a salad for lunch, I made 2 extra for lunch on Monday and lunch on Tuesday.  How do YOU plan ahead for healthy eating? Share your ideas with us.

This particular Russian Salad is from Prana Fitness’ friend Anna:

  • 1/2 cucumber, diced
  • 1 tomato, diced
  • 1 sprig fresh dill, chopped
  • 2 green onions, chopped
  • Huge handful or two of fresh baby spinach, chopped
  • 2 T sour cream
  • Sea salt to taste

I love it!  Gets some greens in and fixes my salty cravings.

  1. My sis and I have been blogging a lot about planning ahead as the core of healthier eating, particularly for those who work outside of the home. Our favorite trick is to make much larger amounts of specific components of meals. For example every time we make a dish to serve with rice or another grain, we make a LOT of extra of the grain so it can be used as the bottom layer for portable leftovers later in the week.
