Greek Salad with Chickpeas

Greek Salad with Chickpeas.  From the Nourishing Meals cookbook, but unfortunately not on their website.  A fav of mine for the last year and a half.  I double the recipe and it feeds me for all my work lunches all week long.

Salad:
• 1 or 2 heads of romaine lettuce, rinsed, chopped
• 2 cups cherry or grape tomatoes, halved
• 2 cups canned chickpeas or garbanzo beans, drained, rinsed
• 1 cup pitted kalamata olives, halved
• 1/4 red onion, diced
• 1 large cucumber, diced

Dressing:
• 1/2 cup extra virgin olive oil
• 6 tablespoons lemon juice
• 2 cloves garlic, pressed
• 2 tablespoons fresh oregano leaves
• 1/2 teaspoon sea salt
• 1/2 teaspoon ground black pepper
