Zucchini Noodles

As my farmer’s market share is coming to a close for the season, I’m still lucky enough to get some zucchini and squash. Using a simple spiralizer tool like this, you can turn zucchini and squash into noodles. It works best if the diameter of the veggie is the same or smaller than the spiralizer diameter. Toss them in your favorite warm pasta sauce, maybe add grilled chicken and tomatoes, and serve.  Noodles can be in sauce for just a minute to warm up if you like the veggies crunchier, or can cook in the sauce for 5-10 minutes if you want the veggies squishier.
