Breakfast Cookies

Made these cookies for the second time and love them. I use regular chocolate chips instead of the Paleo version. But they are delish and healthy. Light and fluffy.

  • 2 bananas mashed
  • 1 cup coconut
  • 1/2 cup almond butter
  • 1/4 cup chocolate chips
  • 1 egg
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Mix all together in a bowl. Spoon into parchment paper covered cookie sheet. Bake 15 mins at 350 degrees.
