“Cleaner” Endurance Balls

The last few months I’ve been making a cleaner version of this old favorite, Endurance Balls:

  • 2 cups Bob’s Red Mill gluten-gree oats
  • 1 cup almond butter
  • 2/3 cup honey
  • 2 cups unsweetened coconut flakes
  • 1 cup ground flaxseed or flaxmeal
  • 2 tsp vanilla
  • 4 scoops of Bulletproof upgraded collagen protein
  • (optional) 1 cup Lilly’s dark chocolate stevia-sweetened chips

Mix all ingredients together in a large bowl (I like to use a table knife to mix it- easier than a spatula) until well incorporated. Roll into 1″ balls. Makes about 35 balls.

Nutrition info per ball: 126 calories, 8.2 g fat, 9.6 g carbs, 4.2 g protein, 2.6g fiber
